One thing I love about Fall is the apples. I’m not really a great fan of this fruit, but I just love it when my wife makes some amazing Apple Crumble.


This is the only way I could eat apples and I have to tell you that this is the yummy way to enjoy the fruit. This and some music playing in the background would make my night. Which reminds me, I have to bring my son’s guitar to lancaster music for repair this weekend. Anyway, back to my Apple Crumble. Do you want her recipe? Here goes…

Apple Crumble

4 large Golden Delicious apples (about 3 pounds)
1/4 cup sugar
1 lemon, juiced
2 tablespoons all-purpose flour
1/2 teaspoon ground cinnamon
1 cup walnuts or pecans, roughly chopped
1 cup all-purpose flour
1 1/4 cups rolled oats
1/2 cup packed dark brown sugar
1 teaspoon ground cinnamon
Pinch fine salt
8 tablespoons (1 stick) cold butter, cut into small pieces
Vanilla ice cream, for serving, optional


Position an oven rack in the center of the oven and preheat to 350 degrees F.
Peel, core, and slice apples into 1/4-inch slices. Place apples in a large mixing bowl and toss with sugar, lemon juice, flour, and cinnamon. Pour into a lightly greased 9 by 13-inch baking dish, and spread out into an even layer. Set aside.
In another large bowl, mix together the nuts, flour, oats, sugar, cinnamon, and salt for the topping. Using a pastry cutter or your fingers, gently work in the cold butter until pea-sized lumps are formed.
Top apples evenly with mixture and bake until apples are bubbly and topping is golden brown, about 45 minutes, rotating once halfway through cooking.
Serve warm or at room temperature with vanilla ice cream.

Sometimes people talk themselves out of entertaining friends, family, colleagues, and others. They think that they need to have a fancy dining room, expensive dishes, and prepare an expensive meal. However, entertaining others is more about showing hospitality and building friendship. Of course, you want to provide something nice for your guests to eat and you want to have something nice to serve it on. However, you do not need to make things overly complicated or expensive.

If you are on a limited budget, this does not mean that you cannot be hospitable. Instead, it means that you need to creative or you need to be willing to try different options that you may have not considered in the past. For example, instead of inviting friends over for an expensive meal, why not simply have some friends over for dessert? It is not that expensive to prepare some cookies, a nice cake, and a pot of coffee. Or if it is a hot summer day, you can purchase a tub of ice cream that everyone will enjoy. You can get a couple of different toppings and prepare some sundaes. This requires very little preparation and is not at all expensive. Your guests will appreciate your hospitality and everyone will have a great time.

Another idea is to create an elegant environment, but not need to purchase that many items. For example, what about planning an afternoon tea with some of your best girlfriends? If you have a nice tea set, you can prepare a couple of different tea options. You can serve the items on a beverage cart. Then you can make scones, cookies, or small sandwiches. Everyone will enjoy a fancy afternoon at your home. Instead of spending a lot of money on an expensive meal, you can buy a couple of items that will make the event nice and can be used again. This will be a great escape for women who have hectic schedules and who do not have the opportunity to enjoy the finer things in life that often.

When it comes to coming up with ideas for showing hospitality to others, remember why you really want to do it. You want to show kindness to others and build friendships. Instead of focusing on trying to impress others with an expensive meal, think about how much the individuals who you have invited over mean to you. Build friendships with them that will last a lifetime.

I miss my favorite chocolate drink. It’s been awhile since I drank a hot cup of chocolate before hitting the sack. I checked our pantry for some and was happy to find swiss miss hot chocolate in there. I wasted no time mixing one up for a nightcap. It sure beats a glass of milk. I have to ask my wife to always stock up on my favorite chocolate drink.

We usually throw away lemon peels unless we need the zest for desserts. I just recently found out that the peel can be used to season foods.  When sprinkled on your food or drink, it tastes so much better.  Here’s the article I got from my email.

Many professionals in restaurants and eateries are using or consuming the entire lemon and nothing is wasted. How can you use the whole lemon without waste?  Simple.. place the lemon in the freezer section of your refrigerator.  Once the lemon is frozen, get your grater and shred the whole  lemon (no need to peel it) and sprinkle it on top of your foods.  Sprinkle it into your whisky, wine, vegetable salad, ice cream, soup, noodles, spaghetti sauce, rice, sushi, fish  dishes.   All of the foods will unexpectedly have a wonderful taste,  something that you may have never tasted before.   Most likely, you only think of lemon juice and vitamin C.   Not anymore.  Now that you’ve learned this lemon secret, you can use lemon  even in instant cup noodles.  What’s the major advantage of using the whole lemon other than  preventing waste and adding new taste to your dishes?  Well, you see lemon peels contain as much as 5 to 10 times  more vitamins than the lemon juice itself.  And yes, that’s what you’ve been wasting.   But from now on, by following this simple procedure of  freezing the whole lemon, then grating it on to the top of  your dishes, you can consume all of those nutrients and get
even healthier.  It’s also good that lemon peels are health rejuvenators in eradicating toxic elements in the body.  So place your lemon in your freezer and then grate it onto your meal every day.   It is a key to make foods tastier and you get to live  healthier and longer, too!   That’s the lemon secret!  Better late than NEVER!
